What Angle Should You Sharpen Kitchen Knives To
Between 15 and 20 degrees per side covers almost every kitchen knife. Holding whatever angle you pick matters far more than picking the perfect one.
15 to 20 degrees per side covers almost every kitchen knife. If you want one number and no further reading: 17 degrees, and stop worrying about it.
The reason that answer is unsatisfying is that people expect the angle to be the thing that decides how sharp a knife gets. It is not. Consistency is. An edge held steadily at a slightly wrong angle beats an edge that wandered between 12 and 22 degrees while you aimed for 15.
What the angle actually controls
The angle sets a trade-off between sharpness and durability, and there is no way around it.
Shallower — say 12° per side — puts less steel behind the apex. The edge is finer, it starts cuts more easily, and it is weaker. It rolls and chips sooner.
Steeper — say 22° — puts more steel behind the apex. It takes a little more force to start a cut, and the edge survives contact with a bone or a hard squash that would damage a fine one.
That is the whole physics. Everything else is about matching the trade-off to the knife and the cook.

The pattern is simple: harder steel and gentler work go finer, softer steel and harder work go steeper.
Note that the modern numbers are closer together than the old advice suggests. "German 20°, Japanese 15°" was true a couple of decades ago. Wüsthof now grinds at 14° per side and Shun's Classic at about 16° — the German knife is finer than the Japanese one. Check what your specific knife came with rather than assuming from its origin. Total angle vs per side
A constant source of confusion, and worth being precise about.
Per side is the angle between the stone and one face of the blade. Inclusive or total is both sides added together.
A knife described as 15° per side is 30° inclusive. The same knife could be advertised either way, so "20 degrees" on a box means nothing without knowing which convention the manufacturer used. If a figure seems oddly steep or oddly fine, it is probably the other measurement.

How to hold an angle without a guide
Three methods, in increasing order of accuracy.
The paper fold. Fold a square of paper in half — 45°. In half again — 22.5°. Once more — about 11°. Two of those folds against each other gets you a physical reference for roughly 15–20°. Set the blade against it, look at the gap, then remove the paper and keep the feel.
The coin stack. Put the edge on the stone and lift the spine until it rests on a stack of coins. Two US quarters under the spine of an 8-inch blade lands you around 15°. The taller the stack and the narrower the blade, the steeper the angle. Note the wrist position, remove the coins, sharpen.
The marker test. The only method that tells you the truth. Colour the bevel with a permanent marker, take two or three light strokes, and look at where the ink has gone.
- Ink gone at the very edge, still there higher up → your angle is slightly too shallow. Lift the spine a little.
- Ink gone higher up, still there at the edge → too steep. Lower the spine.
- Ink gone evenly across the whole bevel → you are matching the factory angle. Stay there.
The marker test costs nothing and removes all the guesswork. Do it once at the start of every session until the feel becomes automatic.
Consistency beats precision
If there is one thing to take from this: the number matters less than holding it.
The edge is formed where the two bevels meet. If your angle wanders, you are not grinding one bevel — you are grinding a rounded, convex surface that never comes to a clean apex. That is why some people sharpen for half an hour and end up with a knife that still will not cut paper.
Three things help more than aiming carefully:
- Lock the wrist and move from the shoulder. The wrist is the joint that drifts.
- Watch the spine, not the edge. The spine's height above the stone is your angle. It is much easier to see than the edge.
- Fewer, slower strokes. Speed is where consistency goes.
Should you match the factory angle or change it
Match it, unless you have a specific reason.
The maker chose an angle to suit the steel's hardness and the knife's intended job. Grinding a 60 HRC Japanese blade down to 12° because finer sounds better gives you an edge that chips on the first butternut squash.
Two legitimate reasons to change:
- Your knife keeps chipping. Go two or three degrees steeper. You lose a little cutting ease and gain durability.
- You have a soft German knife and you sharpen often. Going a couple of degrees finer makes it cut noticeably better, and you are willing to touch it up more frequently.
Changing the angle means reprofiling — grinding away enough steel to establish a new bevel across the whole edge. On a coarse stone that is fifteen minutes of work per knife, so it is a decision, not an experiment.
Micro-bevels
Once you can hold an angle, this is the one refinement genuinely worth knowing.
Sharpen the main bevel at your chosen angle, then finish with two or three very light passes per side at roughly five degrees steeper. That leaves a tiny secondary bevel right at the apex.
The result: the knife still cuts like a fine edge because the blade behind it is thin, but the very apex has more steel supporting it, so it lasts longer. It is how most factory edges are made and it costs about twenty seconds.
Angle guides
Clip-on plastic wedges that sit on the spine and hold a fixed angle. Honest assessment:
They work, they are cheap, and they are a reasonable way to learn what 15° feels like. They also slide on a wet blade, they do not fit every spine thickness, and they wear down against the stone.
Use one for a few sessions to calibrate your hand, then stop. Fixed-angle systems — the clamp-and-rod kind — hold an angle perfectly and are a genuine option if you want repeatability without practice, at the cost of setup time per knife.

Common questions
What is the best angle for a kitchen knife? 17° per side is a safe default for almost anything. German knives tolerate 15–20°, hard Japanese knives suit 15–16°, cleavers want 20°+.
Is 20 degrees too steep for a chef's knife? No. It is on the durable end and it will still cut well. You would notice a slight difference starting a cut on a tomato compared with 15°, and a noticeable difference in how long the edge lasts.
Does the honing rod need to match my sharpening angle? Roughly, yes. Honing realigns the existing apex, so hold the blade at about the angle it was sharpened to. A few degrees off does no damage.
Can I use a different angle on each side? Yes, and some Japanese knives are ground that way deliberately — 70/30 rather than 50/50. Keep whatever ratio the knife came with rather than inventing one.
How do I know what angle my knife came from the factory with? The marker test tells you in thirty seconds. Colour the bevel, take two strokes at your best guess, and read where the ink went.
