German vs Japanese Chef's Knife
The difference is not craftsmanship or country. It is a single engineering decision about hardness, and everything else follows from it.
Ask which is better and you get tribalism. Ask what is actually different and the answer is short: how hard the steel has been made. Every other difference — the weight, the edge angle, the maintenance routine, even the shape of the blade — follows from that one decision.
Once you see it that way the choice stops being about taste and starts being about how you cook and how much maintenance you will realistically do.
The number that drives everything
German kitchen knives are typically hardened to 55–58 HRC. Japanese knives usually run 60–63 HRC.
That gap looks small. It is not.
Harder steel holds a finer apex for longer, but it is more brittle. Softer steel loses its apex sooner, but it bends rather than breaks, which means a few seconds on a honing rod brings it back.
So a German knife goes dull gradually and recovers easily. A Japanese knife stays sharp for far longer, and when it fails it tends to chip — and a chip only comes out on a stone.
Everything below is a consequence.
Edge angle
Because soft steel cannot support a very thin edge without rolling, German knives are ground thicker. The old European standard was around 20° per side; most modern German makers have moved finer. Wüsthof's Classic line, for example, is ground to 14° per side.
Japanese knives are ground thinner because the harder steel can hold it. Shun's Classic is about 16° per side, MAC's Professional line 15°, Global between 10° and 15°.
Note that the numbers now overlap. The old shorthand — "German 20°, Japanese 15°" — is out of date. What has not changed is why: a German maker grinds to 14° and accepts more frequent honing; a Japanese maker grinds to 15° and expects a whetstone.
Weight
This is where the two feel most obviously different in the hand.
A forged German chef's knife carries a full bolster and a thick spine. A Wüsthof Classic 8-inch weighs 265 g. A Global G-2 of the same length weighs 170 g — nearly 100 g less, in the same nominal size.
Heavy knives do more of the work on hard vegetables; the mass carries through a squash where a light blade stalls. Light knives are faster and far less tiring over an hour of prep, and they let you feel what you are cutting.
Neither is better. But if you have small hands or long prep sessions, weight matters more than any other spec on the page — and it is the one people ignore in a shop, because heft reads as quality.
Steel
German: almost universally X50CrMoV15 (sometimes labelled 1.4116). About 0.5% carbon, 15% chromium. Extremely corrosion resistant, tough, easy to sharpen, and it will never hold an edge like a high-carbon Japanese steel. It does not need to.
Japanese: a much wider spread — VG-10, VG-MAX, AUS-10, SG2, CROMOVA 18. More carbon and more vanadium, which is what allows the higher hardness.
One consequence people meet the hard way: many Japanese knives are laminated, with a hard core clad in softer stainless. The cladding is corrosion-resistant; the exposed core at the very edge often is not. A VG-10 knife left wet on a board can spot at the edge in a way a German knife will not.
Maintenance is the real dividing line
Honestly, this is the whole decision.
German knives tolerate almost anything. A honing rod, a pull-through sharpener, a beginner's first attempt on a stone. The steel is soft enough that mistakes are recoverable, and there is nothing you can do at the sink that will destroy it.
Japanese knives do not. A ribbed honing steel is too aggressive for 61 HRC — use a ceramic rod or nothing. A carbide pull-through sharpener will tear chunks out of the edge. Twist the blade in a squash or hit a bone and you get a chip.

Shape
Two differences worth knowing, though they matter less than the specs.
Belly curve. German blades have a pronounced curve, suited to rocking the knife through herbs with the tip on the board. Japanese gyuto profiles are flatter, favouring a push or draw cut where the blade lifts clear each time.
Neither forces a technique. But a flat-profile knife feels awkward if you rock, and a heavily curved one wastes edge if you push-cut.
Handle. German handles are contoured and usually triple-riveted. Japanese handles are either Western-style (similar) or traditional wa handles — light, octagonal or D-shaped, unweighted. A wa handle shifts the balance forward, which some people love immediately and others never adjust to.
Which to buy
German if: you want one knife that survives whatever the household does to it, you cut a lot of hard vegetables or occasionally hit bone, you would rather hone for ten seconds than sharpen for fifteen minutes, or other people use your knives.
Japanese if: you already sharpen or want to learn, you value a fine edge over durability, you find heavy knives tiring, and you can be trusted to keep the blade off bone and glass.
A pragmatic third answer: buy an inexpensive German knife as the everyday workhorse and add a Japanese knife later for the jobs that reward a fine edge. Most people who own both use them this way without planning to. The cheap knife takes the squash and the chicken bones; the good one does the fish and the tomatoes.
What does not distinguish them
Country of manufacture. Plenty of "German-style" knives are made in Asia and plenty of Japanese brands manufacture in several places. The specs on the page tell you more than the flag.

Common questions
Is a Japanese knife sharper? Out of the box, usually slightly — thinner grind, more careful finishing. After a few months, the sharper knife is whichever one you maintain. Hardness affects how long the edge lasts, not how sharp it can get.
Can I use a honing steel on a Japanese knife? Not a ribbed steel rod. A smooth ceramic rod is fine and useful. At 60+ HRC the edge is more likely to chip than to roll, so honing does less for it anyway — the fix is the stone.
Will a Japanese knife chip if I cut through a chicken bone? Very likely, yes. That is what the hardness buys and costs. Keep a cheaper, softer knife for bones and frozen food.
Which lasts longer? Both outlive their owners if maintained. The German knife will look worse and cut fine; the Japanese knife will look fine and be more sensitive to how it has been treated.
