How to Use a Whetstone
The stone is the easy part. Most whetstone frustration comes from the wrong grit, a dished surface, or soaking a stone that was never meant to be soaked.
A whetstone is a flat abrasive block. You rub steel against it at a consistent angle until a new edge appears. That is the whole idea, and it is why a stone outperforms every gadget: nothing is fixed, so nothing is wrong for your particular knife.
The frustration people hit is almost never technique. It is the wrong grit for the job, a stone that has gone hollow in the middle, or a stone soaked when it should not have been.

Which grits you actually need
Grit is how coarse the abrasive is. Higher number, finer finish, slower cutting.

For a kitchen, a combination stone with 1000 on one side and 3000 or 6000 on the other covers everything. A separate coarse stone is worth buying only when you have a chip to grind out.
The common mistake is buying an 8000-grit stone because higher sounds better, then wondering why a dull knife does not improve. A fine stone cannot create an edge. It only refines one that already exists.
Soaking: check which kind you have first
This matters more than it sounds, because getting it wrong can crack the stone.
Soaking stones need to be submerged before use — usually five to ten minutes, until bubbles stop rising. They are thirsty, and using one dry clogs it and glazes the surface. Most traditional Japanese water stones work this way.
Splash-and-go stones need only a wet surface. Soaking them can, over time, cause them to crack — some binders swell. If the packaging says splash-and-go, or the stone is a ceramic or resin-bonded type, wet the surface and start.
Oil stones use honing oil rather than water. Do not use water on them; do not use oil on a water stone. Mixing the two clogs the surface permanently.
If you have no idea which you own, splash the surface. If the water sits in a bead on top, it is splash-and-go. If it soaks in and disappears within a few seconds, it wants a soak.
Keep the surface wet throughout. Have a small container of water beside you and splash the stone every thirty seconds or so. A stone that dries out mid-session stops cutting and starts polishing.
The slurry is doing the work
As you sharpen, the water on the surface turns grey and slightly thick. That is slurry — a mix of water, abrasive particles shed by the stone, and steel filings from the knife.
Do not wipe it off. The slurry is a large part of what cuts. Rinsing it away mid-session slows you down.
Some sharpeners deliberately build slurry with a small nagura stone before starting. That helps on very hard stones. On a normal 1000-grit kitchen stone, the slurry builds itself within a minute.
Rinse the stone only at the end, or when you change grits — carrying coarse particles onto a fine stone scratches the finish you are trying to create.
Keeping the stone flat
This is the part almost everyone ignores, and it is the reason a lot of people conclude they "cannot sharpen".
A stone wears where you use it. Since most people work in the middle, the middle wears fastest and the stone goes dished — concave along its length. A concave stone cannot produce a straight edge, no matter how good your angle is. It rounds the edge, and you get worse results the more you practise.
Check it by laying a straight edge — a steel ruler, another stone — across the surface and looking for light underneath.
Fix it one of three ways:
- A flattening plate (a diamond lapping plate). Fastest and most accurate. Worth owning if you sharpen often.
- Wet-dry sandpaper on glass. 200–400 grit, taped to a flat tile or a thick piece of glass. Rub the stone on it in circles until flat.
- Another stone. Rub two stones of similar grit face to face. Crude, works, wears both.
A useful habit: pencil a grid of lines across the stone before flattening. When every pencil line is gone, the surface is flat.
Flatten more often than feels necessary. A stone flattened every few sessions never gets far out of true; a stone flattened once a year takes twenty minutes of grinding.
Setting up
Whatever the stone sits on must not move. A stone that slides is dangerous and makes a consistent angle impossible.
Most stones come with a rubber base or a holder. If yours did not, a damp folded tea towel under the stone works and is what most people end up using.
Work at a comfortable height with the stone perpendicular to your body, or at a slight angle if that suits your arms. Standing usually beats sitting, because it lets you move from the shoulder rather than the wrist — and a locked wrist is what keeps the angle steady.
Working through the grits
If the knife is dull but undamaged, start at 1000. Only reach for a coarse stone when there is a visible chip or the edge is so worn that 1000 makes no progress after several minutes.
The order is always the same: create the edge on the coarse or medium stone until you have a burr along the whole length, then move up. Each finer grit removes the scratches left by the previous one.
Do not skip more than one step. Going 400 straight to 6000 means the fine stone spends its whole session trying to erase deep scratches, which takes forever and wears the stone unevenly.
A practical progression for a kitchen: 1000, then 3000 or 6000, then stop. Anything beyond that is a hobby, not a sharper onion.
Cleaning and storing the stone
Rinse it under running water at the end and rub the surface lightly with your fingers to lift the slurry out of the pores. No soap.
Let it dry completely before putting it away — a wet stone stored in a sealed box grows mould, and a soaking stone left full of water can crack if it freezes.
Store it flat and somewhere it will not get knocked. Stones are brittle. A dropped corner is not repairable, and a chipped edge on the stone will scratch your blades.
What to expect the first few times
The first session takes half an hour and produces an edge that is better but not remarkable. The third or fourth takes fifteen minutes and produces an edge better than the knife had when it was new.
The thing that improves is not your hand steadiness — it is your ability to tell what is happening. Feeling the burr, hearing the difference between a blade sitting flat on the stone and one riding on its shoulder, noticing when the stone has dried out. That comes quickly and it is most of the skill.

Common questions
How long should I soak a whetstone? A soaking stone is ready when bubbles stop rising, usually five to ten minutes. Longer does no harm to most, but check whether yours is splash-and-go first — those should not be soaked at all.
Can I use oil on a water stone? No. Oil clogs the pores permanently and the stone will never cut properly again. Water stones take water, oil stones take oil, and the two are not interchangeable.

Do I need a nagura stone? Not for kitchen knives on a normal 1000-grit stone. The slurry builds on its own within a minute of starting. A nagura helps on very hard, fine stones that are slow to release abrasive.
How long does a whetstone last? Years of home use. You will flatten away a few millimetres over its life. Replace it when it is too thin to sit stably, or when it will not hold flat between sessions.
