Best Chef's Knives: A Buying Guide Built on Specs
Most chef's knife guides describe how a knife feels. This one starts with the four numbers that decide how it feels, then tells you which knives are worth the money at each price.

A chef's knife is the only knife most kitchens genuinely need. It does perhaps eighty per cent of the cutting in a normal week — onions, herbs, chicken breasts, squash, everything that is not bread and not fiddly enough to want a paring knife.
Which is why the advice around it is so unhelpful. Guides describe knives as "nimble" and "confident" and "a joy to use", none of which survives contact with a real kitchen. What actually determines whether you like a knife is a short list of measurable things: what the blade is made of, how hard it has been made, how much it weighs, and how thin it is behind the edge. Learn to read those four numbers and you can predict how a knife will behave before you touch it.
This guide starts there, then applies it to specific knives.
What a chef's knife has to do
The shape has a job. A chef's knife has a curved belly so it can rock through herbs without the tip leaving the board, enough blade height that your knuckles clear the surface, and enough length that one pass gets through a whole onion rather than three.
Everything else is negotiable, and most of it is preference. There is no single best chef's knife, only knives that suit a particular hand, a particular budget, and a particular willingness to maintain them. A cook who sharpens weekly should buy a very different knife from one who will not.
The four numbers that decide how a knife feels
Steel
Steel type sets the ceiling on everything else. For kitchen knives it splits roughly in two.
German stainless — almost always X50CrMoV15, sometimes labelled 1.4116 — is the alloy in Wüsthof, Zwilling, Mercer, Victorinox and most European knives. It contains about 0.5% carbon and 15% chromium. It is tough, extremely corrosion resistant, and easy to sharpen. It does not hold an edge for very long.
Japanese stainless covers a wider spread: VG-10, VG-MAX, AUS-10, SG2, CROMOVA 18. These generally carry more carbon and more vanadium, which lets them be hardened further and keeps a finer edge for longer.
There is no free lunch. The alloys that hold an edge longest are also the ones that chip rather than roll when you abuse them, and the ones that take the longest to sharpen once they finally go dull.
Hardness (HRC)
Rockwell hardness is the number that tells you the most, and the one most listings omit.
Most German knives sit at 55–57 HRC. Japanese knives typically run 60–63. The difference sounds small; in use it is the whole personality of the knife.
- 55–57 HRC — forgiving. The edge rolls rather than chips, a honing steel straightens it in seconds, and sharpening takes minutes on a cheap stone. It dulls faster.
- 58–59 HRC — the sweet spot for most people. Noticeably better edge retention, still easy to maintain. Wüsthof's 58 HRC is why the Classic outperforms other German knives with identical steel.
- 60+ HRC — long edge life, fine edges, and real consequences for carelessness. Twist this blade in a squash or hit a bone and you get a chip, not a roll.

Weight and balance
The knives in this guide span 170 g to 265 g — a difference of over 50%, in the same nominal 8-inch size.
Heavy knives do more of the work for you on hard vegetables; the mass carries through a butternut squash where a light knife stalls. Light knives are faster and far less tiring across a long prep session, and they let you feel what you are cutting.
Neither is better. But a 265 g knife in the hand of someone with small hands and an hour of prep ahead is a mistake, and it is the most common mistake in knife buying, because heft reads as quality in a shop.
Geometry: the number nobody prints
Edge angle gets quoted — 15° per side, 14° per side, 22° per side. It matters, but less than the thing that never appears on a spec sheet: how thick the blade is a few millimetres above the edge.
That is what decides whether a knife falls through a potato or splits it. A thick blade behind a thin edge feels sharp for the first millimetre and then wedges. It is also why a cheap thin stamped knife often out-cuts an expensive thick forged one on soft produce, and why spine thickness at the heel — 2 mm on a Global, 3 mm on a Wüsthof — is worth looking up.
Forged vs stamped is mostly marketing
Forged knives are struck into shape from a billet; stamped knives are cut from rolled sheet. Forged construction usually brings a bolster, a full tang and more weight. Marketing has spent decades implying it also brings sharpness. It does not.
The Victorinox Fibrox is stamped, has a partial tang and no bolster, and has been the default knife in professional kitchens for forty years. Meanwhile the full bolster on a forged German knife becomes an active nuisance after a few years of sharpening: the heel wears back, the bolster does not, and eventually you are sharpening around a lump of steel.
Buy forged if you want the weight and the feel. Do not buy it expecting a better cut.

Length: 8 inches unless you know otherwise
Eight inches (200–203 mm) suits nearly everyone. It is long enough to halve a large onion in one stroke and short enough to control on a small board.
Ten inches is faster for anyone who regularly breaks down large volumes, and it needs a board with room for it. Six inches is a paring knife's big sibling — pleasant for small hands and small jobs, frustrating for a cabbage.

The grip changes which knife suits you
Most people hold a chef's knife by the handle alone, fist closed behind the bolster. Nearly every professional holds it differently: thumb and forefinger pinched onto the blade itself, just in front of the handle, with the remaining three fingers wrapped behind.
This matters for buying, not just for technique. In a pinch grip your fingers are in contact with the steel, so three things you would otherwise ignore become the difference between a knife you enjoy and one you tolerate:
- A sharp spine will hurt. Run a thumb along the top of the blade. Cheap knives often leave the spine square from grinding, and after twenty minutes of prep it leaves a mark. Better knives round and polish it.
- A full bolster gets in the way. The pinch grip wants a flat surface to pinch. A thick bolster that wraps the whole heel pushes your fingers forward onto the edge or back onto the handle.
- Balance moves. A knife that feels handle-heavy in a fist grip often balances perfectly in a pinch grip, and vice versa. This is the main reason people disagree so violently about whether a given knife is well balanced — they are not holding it the same way.
If you are going to switch to a pinch grip — and you should, it is safer and more accurate — evaluate knives that way in the shop.
How we chose the knives below
Every pick had to publish or verifiably state its steel and hardness — a manufacturer unwilling to say what the blade is made of is telling you something. Beyond that:
- Available from stock, not a limited run
- A shape a beginner can use safely, so no single-bevel blades
- Sharpenable with normal equipment, so nothing above 63 HRC
- Priced honestly for what it is, which ruled out several knives that are mostly a finish
Specifications below come from the manufacturers and from retailers who publish full spec sheets. Where a figure varies between sources — Japanese knives in particular vary a few grams between batches — we give the manufacturer's number.
What you can stop paying for
Damascus cladding. Those wavy layers are soft stainless folded around a hard core. They are structural on a traditional carbon blade and decorative on a modern stainless one. Knife blocks full of knives you will not use. A typical 15-piece set contains a chef's knife, a paring knife, a bread knife, and eleven items that will sit there for a decade. If a set is on your list anyway, read do you really need a full knife set first.
Granton dimples, mostly. The hollows are meant to break suction on starchy food. On potatoes and courgette they help a little. On everything else they do nothing, and they slightly complicate sharpening.
"Ice-hardened", "sub-zero tempered", "cryogenically treated". These describe a normal step in heat-treating decent stainless. Nearly every quality knife gets it. Only some brands put it on the box.
Check these five things when it arrives
Factory quality control on kitchen knives is inconsistent, including at the expensive end. Five minutes with a new knife tells you whether to keep it.
- Sight down the spine from the handle. The blade should be straight. A visible bend means a warped blade, which will never sharpen evenly. Return it.
- Rest the edge on a flat board and look for light underneath. Gaps mean the edge is not straight along its length — again, a sharpening problem you did not create and should not inherit.
- Run a thumb across the spine and the top of the heel, not along the edge. Anywhere that feels sharp to a fingertip will feel sharp to your hand after an hour.
- Cut a sheet of printer paper, held in the air, starting near the heel. A properly sharpened knife slices cleanly from heel to tip. Snagging in one region means an uneven factory edge. Not fatal, but you are sharpening on day one.
- Cut one onion. Wedging, sticking, and any tendency for the blade to steer sideways will show up immediately and will not improve.
Nothing on that list requires expertise, and it catches the manufacturing faults that people otherwise blame on themselves for years.
Sharpening is the actual decision
This is the part that determines whether you are happy with your knife in two years, and it barely appears in most buying guides.
A knife's factory edge lasts weeks, not years. After that, how the knife performs is entirely a function of how you maintain it — and different knives demand different things.
- Soft German steel (55–58 HRC) tolerates a honing steel, a pull-through sharpener, and a beginner on a stone. This is why the Victorinox is such a good first knife: it is nearly impossible to ruin.
- Hard Japanese steel (60+ HRC) needs a whetstone. A pull-through sharpener drags a hard, fine edge across carbide wheels and tears out chunks of it. If you are not willing to learn a stone, a Shun will be a worse knife than a Victorinox within a year.
If you have never sharpened a knife, start with how to sharpen a kitchen knife at home, then pick a stone from the best whetstones. Budget for the stone in the knife's price — a $40 stone attached to a $50 knife beats a $200 knife with nothing.
And keep it off glass, stone and ceramic boards, all of which dull an edge in a single meal. A wood or soft-plastic board is not an accessory, it is part of the knife's maintenance.
Which one should you buy
If this is your first real knife, buy the Victorinox. It costs less than a takeaway for two, cuts better than most knives at four times the price, and you will not be afraid to learn to sharpen on it. If you later want something finer, you will have a beater knife for pineapples and squash, which every kitchen needs.
If you want a forged knife and a budget, the Mercer Renaissance gives you the construction of a German classic at close to stamped-knife money.
If you want the German knife and intend to keep it for thirty years, the Wüsthof Classic is the reference for a reason. Its 58 HRC is the reason it outlasts its rivals between sharpenings.
If heavy knives tire your hand, the Global G-2 at 170 g is the clearest alternative — but the metal handle is genuinely divisive, so handle one first if you can.

Whichever you choose, the honest summary is this: the gap between no knife and a $45 knife is enormous. The gap between a $45 knife and a $200 one is real but small, and most of it is closed by a stone and ten minutes a month.
Common questions
How often should I sharpen a chef's knife? For normal home use, a full sharpening two or three times a year, with honing every week or two in between. Honing straightens an edge that has rolled; sharpening removes metal to make a new one. They are different jobs. See how often you should sharpen.
Can I put it in the dishwasher? Physically, several of these will survive it. Practically, no: detergent is abrasive and alkaline, the heat is hard on handles, and knives knock against everything in the rack. The Victorinox is rated dishwasher safe and will still dull faster for it.
Is an expensive knife sharper out of the box? Usually a little, because it is ground thinner and finished more carefully. The advantage lasts weeks. After that the sharper knife is whichever one you maintain.

Do I need a honing steel as well as a sharpener? Yes, and it is the cheapest useful thing in this article. Honing takes ten seconds and postpones sharpening by weeks. A smooth or fine-ribbed steel suits softer German blades; for a 60+ HRC Japanese knife use a ceramic rod, or skip honing and go to the stone sooner — a ribbed steel is too aggressive for hard steel.
Is a longer warranty worth paying for? Most premium knives carry a lifetime warranty against manufacturing defects, which sounds better than it is. It covers warped blades and loose handles — things you would spot in the first week anyway — and never covers chips, rolled edges or anything caused by use. It is not a reason to choose one knife over another.
Why do two knives with the same steel perform so differently? Heat treatment. X50CrMoV15 at 55 HRC and the same alloy at 58 HRC are effectively different materials in the hand, and the difference is entirely in how the blade was hardened and tempered. This is the single strongest argument for buying from makers who publish their hardness figures.
